Ginger Curry

1. Ginger - 1/2 cup
2. Coconut - 1/2 cup (Grated),
3. Dry red chilies - 3,
4. Cloves - 2,
5. Curry leaves - 1 string,
6. Onion - 1 (Finley chopped),
7. Tamarind paste - 1 tsp,
8. Sugar - 1 tsp,
9. Salt - as per taste,
10. Mustard seeds - 1 tsp,
11. Oil - for frying.

Method

1. Dry roast the grated coconut till brown in a kadai.
2. Now remove the coconut and from the kadai and fry the ginger pieces till brown, add the red chilies, cardamom, cloves and curry leaves to the pan and fry well.
3. Grind all these ingredients in to a fine paste.
4. Now heat oil and add mustard seeds and let it splutter.
5. Next add the onions, the ground ingredients with half a cup of water and the tamarind paste, and bring to a boil.
6. Add the sugar and the salt. Let it boil for 3mins till oil floats on top.
