Badam and Rice Milk Kheer

Ingredients

1 cup almonds
2 cups sugar
6 cups milk
1 tbsp. fine rice
A large pinch saffron
1 cup water
A few drops badam essence
3-4 cardamoms

Method

1. Soak almonds in hot water, peel the skin and chop. Soak rice in water for half an hour. Strain the water from rice, add chopped almonds, 1 cup water and grind to fine paste. To this add 1 more cup of water, mix set aside.

2. Boil milk with sugar till it is reduced in quantity by half. Add ground paste, saffron, cardamom and continue to boil.

3. When the kheer is thick and creamy remove from fire, add essence and mix.

Serve hot or chilled.
